Summer Cookin’ with the Kids

From the “BAM” chef extraordinaire, Emeril Lagasse has a great recipe book for kids called Emeril’s There’s a Chef in my Family (in fact there is a whole series). It contains some neat recipes including this one for the classic guacamole:

1 Ripe avocado, peeled and cut into ½-inch pieces
1 tsp. finely chopped yellow onion
1 clove of garlic
1 tsp minced fresh cilantro
2 tsp fresh lime juice
1/8 tsp salt

1) In a small mixing bowl, combine avocado with the onion, garlic, cilantro, lime juice, and salt and mash with the back of a fork until smooth.

2) Serve immediately, or cover with plastic wrap (pressed directly onto the surface of the guacamole) and refrigerate for up to 4 hours.

Guacamole can be put on top of salad, chicken, beef, and potatoes for a healthy toping.
